Recipe:
4 dl flour
1,5 tsp baking powder
2 tsp ground cinnamon
1 tsp nutmeg
125 g butter
2 dl sugar
2 tablespoons strong cold coffee
2 eggs
1 cup creme fraiche
1 cup mashed banana
and for the topping:
violets/watermelon
pigment
sugar
whipped cream or clotted cream
Preheat the oven to 175 degrees. Mix the flour, baking powder and spices in a bowl. Whisk in another bowl the butter and sugar until you have a fluffy mixture and pour the coffee there. Add the eggs 1 by 1 and stir between the eggs. Add the flour mixture to the egg mixture together with the creme fraiche and mashed banana. Pour into the cupcake tins. They need to bake about 20 minutes in the oven.
For the topping you have to devide the clotted cream of whipped cream all over the cupcake and then you can put the violets and watermelon on your baked cupcake. Or you can mix the pigment with the sugar and sprinkle it over the cupcake. You can also mix the pigment with the whipped cream and clotted cream.
